  1. Start the rice, cooking according to directions on the package.
  2. Heat medium saucepan with olive oil to medium-high.
  3. While pan is heating, cut chicken into 1 to 2 inch chunks, and season with salt and pepper.
  4. Place the chicken into the heated pan, and cook until cooked through, flipping every few minutes.
  5. While chicken is cooking, cut bell peppers into 1/2″ wide long slivers.
  6. After chicken is fully cooked, dump jar of simmer sauce into the pan with the chicken. Also add the two cut bell peppers.
  7. Let the chicken, peppers, and sauce simmer for 10 or so minutes on medium heat. Be sure to stir occasionally. Serve with cooked rice. If you prefer, you can serve it with naan, like I’ve shown here.
