  1. Place a foil lined baking sheet on the lowest rack in the oven. (This is for easy clean up and less mess, as the cookie sheet will catch any sweet potato syrup that drips during baking)
  2. Prick each sweet potato 6 times with a fork. Next, place the sweet potatoes directly on the middle oven rack in your cold oven. Be sure the potatoes are sitting above the foil lined baking sheet.
  3. Set the oven to 425 degrees and set a timer for 45 minutes. (For really large sweet potatoes, those larger than 3 inches wide in diameter, set the timer for 1 hour)
  4. When the timer goes off, turn the oven off. Do not open the oven, as you do not want the heat to escape. Let the sweet potatoes sit in the cooling oven for at least 30 minutes. Finally, remove them from the oven with tongs, while wearing an oven mitt. Serve immediately.   1. In a small mixing bowl, fold together all of the butter ingredients until incorporated. Place the butter on a piece of plastic wrap, and use the plastic wrap to form the butter into a ball. Let the plastic wrapped butter sit in the refrigerator for at least 30 minutes before serving.
